Abstract

Food demand appears to be steadily increasing, as a function of population growth and income. These levels of consumption, never seen in the past, project the world into unknown scenarios, soon called to test the validity of Malthus law and its consequences. While questioning the capacity of supply to meet demand, agriculture is the main factor in the development of the economy. This leads to outline the main evolutionary motives of food consumption, which will increasingly exert their influence on the planet.
